Slow Roast Yellow Cherry Tomatoes

Unlike red cherry tomatoes, yellow cherry tomatoes are rich in carotene. Yellow cherry tomatoes have reduced levels of chlorophyll and acid to sugar ratio which results in them being more on the sweeter side than their red-colored counterparts. They offer a healthy dose of fiber, vitamin C, A and other nutrients required for a healthy lifestyle.

    Method

  • Preheat your oven to 110º Celsius.
  • Cut the tomatoes in half and add in a mixing bowl. Add the thyme/basil powder, sea salt, garlic cloves, virgin oil, and black pepper and toss it until everything is mixed properly.
  • Line a baking tray with parchment paper and lay out the tossed tomatoes on the paper and put the tray into the preheated oven for 2 and a half hours or until the tomatoes look shrunk but still juicy.
  • You can use them right away after letting them cool down a bit or store in a jar and fill it up with olive oil and put it away for a few weeks to make homemade pickle.
