Pasta in Alfredo Sauce

Alfredo sauce is arguably the easiest to make and most beloved of every pasta lover. It was first made in Rome, Italy by a boy named Alfredo di Lelio when he started working in his mother’s restaurant (around 1920). Over the years, it was brought to different places of the world and people started altering the dish slightly. What they added to it depended on where they lived, and in any form anywhere, alfredo pasta is always regarded as the best comfort food. This recipe is of the most basic yet delicious fettuccine alfredo.

Method

  • Cook the fettuccine pasta according to the packet instructions in a large pot.
  • Heat butter over medium heat in a separate pan or skillet. Add garlic and saute for a minute or two.
  • Add the cream and let it cook and reduce over 5 minutes. Distribute the parmesan cheese into equal quantities and add half of it in the skillet. Whisk until the cheese has properly melted and it is all a homogenous mixture.
  • Drain pasta, save some of the pasta water as it can be used to thin the mixture if it gets too thick for your liking.
  • Add the pasta to the sauce and mix it. Add the remaining half of parmesan cheese and toss it all together thoroughly. Add some pasta water if needed.
  • Turn off the heat, garnish with parmesan cheese and oregano/ Italian parsley.
