Schezwan Fried Rice

Directions

Step 1: To cook Chinese schezwan rice. Wash them by placing them under a running tap of water so that the impurities are separated and excess starch is removed.

Step 2: Transfer them in a deep bowl, and add water till they are completely submerged. Soak them for 30 minutes.

Step 3: Drain the water with the help of a strainer.

Step 4: Boil 4 cups of water in a deep non-stick pan and add salt and oil to it and stir well.

Step 5: Add rice to boiling water and stir well.

Step 6: Cook on a medium flame for 8 to 10 minutes or till the rice is 85% cook. Make sure to stir occasionally as the rice should not be completely cooked they should be firm to bite.

Step 7: Strain it using a strainer and let the water drain out. This will give you a quantity of 3 cups. Make sure not to overcook the rice as we do not want them to be in a mushy texture.

Step 8: Rinse rice with cold water to stop it from getting overcooked and to remove moisture from it.

Step 9: Add 1 tbsp of oil to prevent the rice from sticking from each other.

Step 10: Toss the rice to ensure that each grain is coated with oil.

Step 11: Spread the rice on a plate and let it cool for 1 or 2 hrs.

Step 12: Heat a non-stick pan or a wok and add oil to it. Let the oil get heated

Step 13: Add chopped ginger and garlic to the oil, saute on high flame for 2-3 minutes for a few minutes.

Step 14: Add spring onions, capsicum, carrot, beans and saute them.

Step 15: Add the celery to the prepared mixture.

Step 16: Add schezwan sauce, soya sauce, vinegar and 2 tbsp of water saute well. Stir for 2 -3 minutes

Step 17: Add the rice to this mix and cook for another 2 minutes

Your schezwan rice is all ready to serve!!
