Roasted Cauliflower And Carrots Rice

Making riced cauliflower is much easier than you might is very tasty and highly nutritional recipe. Also it is much easy to cook. It takes only 40 minutes to have this delicious lip-smacking dish on your table. All you need to do is to mince cauliflower and carrot till they resemble rice! Cauliflower is one of those vegetable which is present in every house hold and is also something which is experimented every time, so here is a new experiment. Let us go and try it!

  • Heat oven to 425 degrees.
  • While the oven is heating, take a mixing bowl and add minced cauliflower and carrot into it. Add diced onion, grated ginger and mix them well.
  • After mixing the vegetables add olive oil, salt and pepper into mixture and stir to coat all the vegetables in oil.
  • Spread out this mixture on the parchment paper and put it into oven for 30 minutes.
  • You can mince cauliflower and carrot by putting them in blender and processing it for 2 minutes.
  • Take it out of oven and serve it hot with coriander leaves on top.
